Concerning the lack of volcanoes in the sagas:
It has been suggested (I think it was Sverrir Jakobsson) that the medieval writers would eschew all mentions of these fiery conflagrations because it was simply bad PR for Iceland. Sulfurous eruptions were of course the standard image of hell in the middle ages and god forbid that these writers would want other Norse peoples thinking that the island was hellish in nature.

Can you give a recommendation for a version/translation/critical edition of the Argonautica (mentioned by John, I think)? Or am I fine just reading a free version online?

We both use the Penguin Classics translation. It’s a good read and much more accessible than the available free ones online. – Andy
